I'm assuming no to the ones you've already published with diagrams/cps?
If so, you may want to invent a bit.

Mummified body (of anything)
Half-face mask
Wild boar
Ufo
Headless anything
Some ideas.

ALL of the fantasy ones, i'm drowning, modular coaster, vendor (maybe). Definitely 'i'm drowning'! That is such a good idea!

i definitely like the idea of the ufo. i'll try to design one.

Ok, being a fantasy model book, and after removing the ones from the cover, my pick would be:

baby ahuizotl
flapping dragon
phantom
fairy person

You could mention in your book a bit about the characters, for example explaining what an ahuizotl is. If so, don't forget to cite, add references and to write in your own words. That way you won't ever have to worry about accusations of copyright infringement :)

Or you could simply ignore my idea and just add diagrams. That's always an easier option ;)

I wouldn't go right away and make a book. I would diagram some models, and submit them to convention books. If you haven't attempted diagramming yet, I can assure you it is awful. Just take it step by step until you feel confident enough to make a book. As for my favorite models, I went to your website and checked them out. Some were good, but needed improvement, and others were great. These are my favorites:
sky serpent
baby goblin (The head looks a little like a cat, so I would pull the ears farther apart imho)
phantom
fairy person (I think changing the name to just 'fairy' would be fine ;) )
nyan cat 2.0
arcticuno
lizard (would shape differently though to make it look more lizardlike)

check out Jo Nakashima's tutorial for diagramming with Inkscape. that's how I learned.

I prefer photo diagrams. They don't take anywhere near as long and they are easier to make clear.

They are easier to make, but if your diagramming anything with much more than 3 steps it probably won't turn out good, especially if you have to find references. Damn near impossible to use, then.
Also, if you don't want your book to seem like one of those low-budget, terrible quality dollar store origami books, then use vector diagrams. Trust me, I have done both, and it is much harder to make high quality photo diagrams than it is to use inkscape. photo diagrams + book = bad idea, anyway.

HT Quyet has some great photo diagrams. He also has a tutorial if you insist on making them.

Okay.
You could use photo diagrams then paint over them to make them like diagrams, just more real.
By paint, i mean like they did with the most recent Tintin movie. Sort of CGI over the top. That would give you the ease and realisticness of photos and the clarity and professionalness of diagrams!
