I can also recommend Kunihiko Kasahara's "Origami Omnibus" for the intermediate folder.

It's over 300 pages long, with 230+ models and even more variations and theories, math etc.

The models are all simple to intermediate, but approach many different ideas and styles.

The english translation is very clear (though a bit ungrammatical at times)
