Since I'm 16 I want to participate in OrigamiUSA's "Origami by Children" exibit. I entered some models last year (Joseph Wu's Eastern Dragon and my Compsagnathus) but they weren't chosen. I think that partly due to the fact that I didn't use very nice paper. Anyway, does anyone have any suggestions on what I should fold and what material to use?

It's not so much the choice of paper and model complexity, but rather how well-folded it is - ie precision, crispness of folds, and how clean the model looks when it's finished. Presentation and pose are also good things to consider. You can fold a straightforward Montroll animal but modify it to show some action, eg a leaping gazelle or rearing unicorn.
