If you have such a predefined opinion that doesn't accept other opinions, why do you ask?

2.angler fish - Robert Lang
3.tarantula - Robert Lang probably.
4.crested penguin - Ogata Hiromi's "Don't Freeze"
5.cassowary - Sebastian Arellanos (Diagrammed at Origami Weekly!)
6.kiwi - Roman Diaz, though now that I see Jonathan Baxter's, that's no longer clear-cut. I need to see more angles on Baxter's.
7. sabertooth tiger - Satoshi Kamiya--no question
8.centipede - Square - Toshiyuki Meguro, Rectangle - Peter Engel
9.platypus - There's not much. Steven Casey's and Ryan Welsh's are about equivalent.
11. echidna - Steven Casey
12. koala - 1 square - David Llanque. 2 square - Taichiro Hasegawa
15. scorpion - There are too many good ones. Yagob's, Brian Chan's, and Robert Lang's all come to mind.
16. hyacynth macaw - Not a hyacinth, but Ashimura Shun'ichi's Scarlet Macaw is pretty cool.
18. komodo dragon - Peter Budai's is the only one I know.
19. windscorpion - Yagob's Camel Spider.
20. leatherback turtle - the late Sebastién Curvers
21. vampire bat (or just a cool bat) Dan Robinson's Townshend Bat
22. narwhal - Jared Needle
23. pangolin - I really want to say Leong Cheng Chit, but I think I have to go with Eric Joisel
25. wallaby (or kangaroo) - Gen Hagiwara's Kangaroo is pretty cool. I'm pretty sure I've seen others, but that is the most recent one I've folded.
27. sun bear - Bernie's is the only one I've ever seen...
28. axolotl - Sebastian Arellanos
29. nudibranch - Kenny Baclawski
30. nautilus - I guess I'm gonna have to give this to Sirgo. His is very beatable though. Hojyo Takashi's is just about as good.
31. pseudoscorpion - Gotta be Katsuta Kyohei
Edit: some new designs beat out the old choices.
9. platypus - Nicolás Gajardo
30. nautilus - Jared Needle

And what about
"22. narwhal - Jared Needle" ??
(My modest opinion: the one by Quentin is the best)

I know it's a joke, but I must point out: It's not shameless self promotion. It's my honest answer to the question "which xxxxxxx is the best?" Also, Quentin's excellent Narwhal didn't even exist at the time.
Also, gotta add Scorpion - Nicolás Gajardo to the list for sure.
Now:
15. Scorpion - Nicolás Gajardo, Nguyễn Hùng Cường or Yago Braojos
22. Narwhal - Jared Needle or Quentin Trollip
