yeah, almost 3m - I was going to use 2m x2m, but... unexpected rolls of 3m wrapping paper changed my mind :D
Harpseal, i don't believe no stores have wrapping paper, or some halfparchment papers. here, where I do live, almost every school/paper store has some kind of bigger sheets - kids use this paper for making presentations.
however, it's hard to get anything bigger than 50-70cm, so finding those rolls was quite lucky

probably.
I've seen ryujin made with all kinds of things, from tracing paper to foil paper to wrapping paper.
and a japanese paper called "sekishu", which you can get is fairly large (about 4 feet in length and 2 or 3 in width)

well, I'm not sure if it is called in english "wrapping paper", in polish it is "brown wrapping paper", but it may be thick kraft, there is no GSM value on it, but I guess it's about 70-90.
and a photo, so we will all know what paper I am talking about :D

its "kraft" paper.
I have a large roll of that at my house but its useless to me, its the cheap kind, used for wrapping stuff. mine has no crease memory :D

I've got a large amount of gritty textured wall display, bright red, white on one side. Will that do?

After test folding all hard sections of the 2.1 version, I'm finally ready to do it for real. What would be better for a first try, 1x1m kraft (80gsm) or 80x80cm tracing (30gsm)?

Yes, but the dragon would become pretty thick, which isn't easy to work with either...

thickness isn't THE reason to choose kraft, it's krafts' durability - you're going to have alot of creases, which will be changed from mountain to valley (or v to m) and crossed, also in 'diamonds' changing the grid paper is easy to rip.
so if your tracing paper is strong, go on - but thick paper isn't bad for ryu zins, you don't have to avoid it

I'm sure we've been through this already, but what size would you recommend for a nearish to beginner level crease patternist who wants a challenge to do ryujinn 1.2 on?

I'd say about 50 cm. The pattern is pretty easy, so you might try with a bit smaller paper.
