Can anyone please tell me what program to use for making the diagrams for a step-by-step origami instruction? I want to write down the instructions for my original origami models and hopefully have them published.
Thanks!

I can't help you with programming, but I just hand-draw the diagrams to remember them. Then, once I learn how to use Inkscape or otherwise, I'll redraw them digitally.

Jo Nakashima has some tutorials for Inkscape diagramming.
You should check them out.

I use inkscape and it works quite well. Jos tutorials on youtube are excellent if you have no experience at all they will get you right up to speed.
If you are looking to publish one or two models, Creased magazine is a great outlet. They do a nice job printing and comes out every other month so you have a better shot of seeing it published soon, rather than waiting till you have enough diagrams for a book. With work and life it has taken me almost a year to get 10 models on paper.

Thanks, maddoghoek100! I just tried Inkscape-- thanks to Jo Nakashima's tutorial at YouTube. I'm still at the basic level and I managed to produce a diagram of the crease pattern for a base that I used for my pig model. You can see it here:
