When making animals from the same family, say not just a horse, but a certain kind of horse, the difference in proportions is all you got to make the difference.
I agree that using a certain pose, on your model helps make it more clear. I use google to find some reference pictures before I even start designing. Then when I found a good base to get proportions about right, I use one of the pictures to shape the model into the pose on the picture.
