Fresh water fish are under represented.
I can think of several salmon, Ronald Koh's goldfish (amongst others), of course, the Lang & Lafosse Koi - but that's about it.
Marine fish have been much better served, perhaps because many common river fish are quite generic looking?

I have always admired John Montroll's Sunfish, in Origami For the Enthusiast .
While a nice fish on it's own, it can be readily modified to resemble another type of fish, a bass, for example .
