That model looks pretty simple, but I don't have time to make photo diagrams right now. Lemme see if I can explain it in words:
Take the bird base and orient it with the central flap pointing downward. There will be a crease between the lower corners; align those with the center. Then bisect the two inner angles.
At the same time, fold two long flaps out from behind and squash the upper edges--this is kind of like a swivel fold. Then narrow the tail, reverse-fold the neck, and shape.
