If you ask me, that's no real fold, but a computer animation. Anyway, it's definitely not from one sheet and I somehow doubt, that diagrams exist.

It might be an interesting contest to try to 'reverse-engineer' it from a kite base or a bird base
Someone might come close or come up with an interesting model.
