I have this CP of a Eagle from Hgung, but what does the gray part means?

(if someone has a CP with Mountain and Valley fold marks, could sent to me?)

you should fold it back and fold it like it is part of the rest of sheet - i mean, fold those two layers as it was one.
if the model assumes color changes, you should check on which side the paper is folded back
