I suggest trying out the CP of Hideo Komatu's Owl. It's very simple, though it is 3-dimensional. There's plenty of help for that one on the forums as well. However, I suggest using a kind of paper that won't try to unfold itself.

It's a model by Tsuda Yoshio, named Scops Owl.
Diagram in Tanteidan magazine 98.
