yes, the graft can be altered. Which was why I was still able to complete the model when I had taught it to Jared 
Using a larger graft it gets you larger fingers, larger wings, longer legs (robe), but it also lends more paper to the hood. So its really about finding the proper balance between the desired traits :/
anyway, what origami_8 suggested is correct. After I had taught using the incorrect reference, the idea of using different graft came to me. That was actually the first different size I tried, it wasn't bad, so thats another option if you want to try

the collapse is pretty straightforward. There really aren't any parts that have are all too odd. The part around its waist/top of the dress part thing maybe a bit odd, though. just ask if you need help on that though.
and yes. Do not go straight for your nice paper first. there is a bit of odd shaping and you shouldn't waste your nice paper trying to figure it out XD

well i just got origami made in poland by artur biernacki, so it might take a while for me to get to it.... but i will fold it!
