You say you don't want to do diagrams for very difficult models but that sawfish and shrimp are in the list?
I like the look of the Indricotheriidae, so I'll vote for that.

By my estimations all these models will not demand more than 130 steps. Difficult models, it is on what some weeks that them to finish are required to me
I like the shrimp. It looks really nice but I'm assuming you have to use large paper, which could be the reason people are reluctant to fold it. Folding large paper feels bleagh.
