It should be a white flap, that makes a right angle. In step 27, on the right, It looks like its just a measurement, but it is actually the flap. Sorry, if this doesn't help.

1. Way back in Step 5, the Flap on the bottom is the one we're pulling out.
2. In Step 26, there are 3 Flaps, the two, thinner outside flaps on each will turn into the ears. We will focus on the Middle Flap only.
3. Sub-Steps of Step 26:
A. Partially open back to Step 25
B. The Middle Flap was Valley Folded in half, when you folded the whole model in half in Step 25.
C. Now reverse the fold in only the Middle Flap into a Mountain Fold. In order to complete this action, you will have to re-close the whole model.
Shazam ! Step 26 should be complete and should look like the picture Step 27...
Thanks I got it... I know this will sound really silly but I thought that the bit that looks like _l on the right of the diagram in the next step was two lines pointing to something. I just realised that this is actually the border of the white coloured flap.

It was night time, so the pink paper ended up looking like kraft paper.
Anyway, I'm gonna fold another one, this time with orange paper! I'll shape the ears this time as well.
